Oreo truffles

This recipe is so simple to make and is always such a huge huge hit everytime I make it and it will be for you too!!

This photo was from a bridal shower I hosted and I used mint Oreos and milk chocolate, and regular Oreos and white chocolate. So simple, only three ingredients, and no baking! From my kitchen to yours, here you go:

OREO TRUFFLES

1 (8oz.) package of cream cheese
1-(15 oz.) package Oreos finely crushed
1-package chocolate chips

Place one package of Oreos in a food processor or blender and crush to fine crumbs. Reserve a couple tablespoons for topping.

Mix one package of cream cheese with crushed Oreos until well combined, and dough like consistency.

Shape mixture into 35-40 balls.

Place balls on lined cookie sheet and place in freezer for 10-15 minutes.

Using a double broiler, melt your chocolate. To dip your balls in the chocolate there are different methods find what works for you. There’s the method of sticking a toothpick in center and coating, using two forks at a time to roll, etc… Place on lined cookie sheet and while still wet, sprinkle Oreo crumbs, or cocoa powder, nuts, your choice, you can go crazy here with endless ideas. I’ve let them cool and drizzle white chocolate over dark chocolate or visa versa. Enjoy!!!

Upcycled Mirror Frame

I have had this mirror for 20 years!  I bought it at an unfinished furniture store and stained it light oak.  I was going to repaint my entry and wanted a mirror that had a bigger statement. I discovered this dark gel stain that I have been painting everything with and wanted to restain this light oak to a darker oak, but wanted a thicker frame, and that would cost me hundreds of dollars.  Hmm??  What to do?   I researched the internet and found this website for ceiling tiles, and faux ceiling tiles.   My mind got to thinking why not cut them up and stain them the same color as my frame and glue them to the wall and that’s what I did!!   For a very minimal cost I have a new upcycled mirror frame, check it out!

This is the stain I used and the Styrofoam ceiling tiles came in 20 x 20 pieces, I stained on one side, then cut them and glued to the wall.

I lightly sanded down the wood, put a clear polyurethane over the old stain and then one coat of lighter brown and one coat of darker brown with streaks with my paint brush to look like wood grain.   SUPER EASY!!  I love the final result and have been gel staining everything :)

Glazed Chocolate Chip Scones

Glazed Chocolate Chip Scones             Serves 8

1.5 C all purpose flour

1/4 C sugar

3 tsp baking powder

1/4 tsp salt

1/4 C butter

1/2 C chocolate chips

1/2 C buttermilk

1 egg

1 tsp vanilla

1 C powdered sugar

2-3 T orange juice

  1. Preheat oven to 400 degrees F.
  2. Mix together flour, 1/4 C sugar, baking powder, and salt in a bowl.  Cut in the butter with a pastry blender or fork until mixture resembles coarse crumbs.
  3. Stir in chocolate chips.
  4. In a small bowl, mix buttermilk, egg and vanilla.   Add to dry ingredients all at once, stirring until mixture is moist.
  5. On a floured board, knead gently a few times, but not too much.
  6. Form into a 8″ round patty on an ungreased cookie sheet, cut into 8 wedges with a knife.
  7. Bake at 400 degrees F for 15 minutes.
  8. Whisk together powdered sugar, and orange juice into a glaze; drizzle over warm scones.
  9. Separate scones and serve warm.

If you’ve read my blog, you know that I like to repurpose things around the house.  Call me frugal, thrifty or cheap, that’s just me.  Today, I want to show you how to easily decorate a serving spoon as a hostess gift or for your special table.   First, you need some glass beads like the ones here on my mantel.

Supplies you will need:  Some aluminum craft wire.  This is #8 gauge.  With wire, the smaller the number, the bigger the wire is. You want to use E6000 craft glue.  This is strongest for these beads, and they will stay in place as long as you hand wash spoon and don’t place in dishwasher. You will also need a pair of needle nose pliers.

Look for some spoons to bling out, and create a pattern with your beads on the handle of spoon, leaving space in between each bead for the wire.  Drop some glue on bead and let them sit for at least 2 hours.  You will be tempted to finish this project now, but it’s very important to give them time to dry completely.  Some times I let them dry overnight.

Now that your beads have completely dried, cut yourself some wire.  Like I’ve said before, I like using what I have around the house. and here I’ve used the line on my table.  From end of table to line measures 22″, this way I don’t need to pull out the measuring tape each time, haha.  Wire is very pliable and can be bent back and forth to break, or choose to use wire cutters.

With needle nose pliers, turn the end in and continue turning.  At this point, you can place the curled end center of pliers and slowly wrap the end of wire to form a spiral.  You can even grasp it with your thumb and forefinger and turn into a spiral.

Now place your spiral on the bottom of your spoon handle and hold your thumb on the spiral.  Start wrapping your wire up the spoon handle in between each bead.  This is the fun part, it’s very secure and doesn’t need to be glued down.  When you get to the end of the spoon, wrap 3 or 4 times around the top and finish with another spiral, wrap so the spiral ends on the front part and lay flat.   That’s it, you’ve made a beautiful beaded spoon!

Scalloped Potatoes

Scalloped Potatoes

serves 4-6 

Ingredients

1-1/2 C half and half

1 tsp italian seasonings

2 garlic cloves minced

1/4 tsp chile powder

1/4 tsp paprika

2 lbs russet potatoes (or 5 large ones), peeled, cut into 1/8″ slices

salt and fresh ground pepper

1/2 C grated Parmesan cheese

Directions

*  NOTE:  I precooked potatoes for 15 min in boiled water, then put in a bowl of ice water to stop cooking while I peeled.  This helped them come out fully cooked out of the oven.  You could also microwave them for 6-8 min, then peel. 

Preheat oven to 375 degrees F.  In a saucepan, heat up the cream with seasonings and garlic.   

While the cream is heating up, butter or spray a casserole dish.   Place sliced potatoes in an overlapping pattern and season with salt and pepper.   Remove the cream from the heat, then pour some over the potatoes.  Top with Parmesan cheese, repeat two more layers.  Bake uncovered for 45-50 min.
